– Gamma-Undecalactone Chemical name: 5-Heptyldihydro-2(3H)-furanone Occurs naturally in: peach , apricot , passion fruit , apple , guava fruit and papaya . Despite the name, it is actually not an aldehyde but a lactone (cyclic ester).
It is a very powerful molecule and should be used sparingly.
Even at 0.1% it can enhance the floral sweetness of other floral notes in a fragrance composition. Aldehyde C14 can also be used as a fixative in fruity compositions. In combination with Aldehyde C18 coconut Aldehyde (Gamma-Nonalactone) very suitable in exotic and tropical accords.
