The Pelatrice method is a mechanical extraction technique in which citrus fruits are rubbed against an abrasive wall by a slowly moving Archimedean screw.
This process breaks the oil glands in the peel, releasing an oil-water emulsion.
The emulsion is then rinsed with water and passed through centrifuges to separate the pure essential oil.
